Verde is the common name for a type of Agave salmiana (most similar to salmiana V. Ferox) that grows mostly in large clumps on old lava beds known locally as “Brena”. Of all the agave that Pepe works with Verde is the one with the least amount of sugars, and higher water content, thus making it very hard to work with. This is a mezcal for a true salmiana lover; one will find beautiful notes of fresh cut green pepper balanced by lactic sweetness.
