Sotol is the common name for a number of species in the Dasylirion genus. We have not yet been able to get a confidant verification of the species of the plants used in this batch but they are a type of Sotol that grow in the forested areas above the Temoaya river. Federico rarely works with Sotol because it seems to take longer to ferment and yield much less than typical agaves that he works with. This tin 50 liter batch is a beautiful reflection of the terror of the region, viewed through the lens of a different plant.
